Banana Muffins

These muffins are super simple and they taste absolutely amazing! Although I am obviously not paleo, I use a lot of flour alternatives because I adore the more rustic texture that they give to my baking. So consequently, these are paleo friendly and I've provided alternatives suitable for vegans with a simple egg and honey substitute. Anyway, enjoy them by yourself or with your entire family or your group of friends!

Recipe:

3/4 cup Coconut Flour

3/4 cup Almond Flour

1 teaspoon ground Cinnamon

2 teaspoons Baking Powder

Pinch of Sea Salt

5 Bananas

6 eggs or egg substitute

1/4 teaspoon Vanilla powder

4 tablespoons Honey (or Rice Malt Syrup)

Method:

1. Preheat your oven to 180C. Fill cupcake holds with paper cupcake holders.

2. In a large bowl mix together the flours with the cinnamon, baking powder and the sea salt.

3. Thoroughly mash 4 bananas in another bowl.

4. Whisk the eggs (or egg alternative) and add to the mashed bananas. Add the vanilla and honey (or Rice Malt Syrup) to the banana mix also.

5. Add the banana mixture to the dry ingredients, mixing together with a wooden spoon until decently combined.

6. Spoon the batter into your muffin holders, making sure to spread the batter evenly.

7. Slice the final banana and add the slices to the top of each muffin. If you like you can also add some nuts to the top, I used walnuts.

8. After 15 minutes of baking, bring the trays out and lightly coat each muffin with honey - this will give the muffins a nice golden brown top.

9. Put back in the oven for another 5 minutes. Test a few muffins with a skewer to see if they are cooked.

10. Allow to cool or eat straight away!

NOTES:

Alternatively you can make this as a banana bread and pour the mixture into a cake tin; make sure you grease the tin or use baking paper.

When mashing the bananas, use a fork instead of a food processor - it’ll create a better texture that leaves the muffins moist when baked.

Egg Alternative:

Flaxseed eggs.

If you’ve been a long time vegan, you would have used this many, many times. It is super simple and easy to use.

For one egg:

1 tablespoon Ground Flaxseeds

2 1/2 tablespoons Water

Method:

1. Add flaxseed meal to water in a dish and stir.

2. Let it rest for 5 minutes and it will thicken.

3. Use in place of one egg.
